ABOUT IRONWOOD
Founded in 2013 in Niagara-on-the-Lake, Ironwood is a contemporary cidermaker rooted in community, craftsmanship, and design. What began as a small orchard project has evolved into an artisan house — a space where minimal aesthetics meet expressive flavour. Every pour reflects our pursuit of clarity and originality in modern cider.
Each season tells its own story — new fruit, new blends, new ideas — all guided by a balance between nature and design. From wild fermentations to modern expressions, our work captures fleeting moments and turns them into something enduring. Ironwood lives in the space between art and agriculture, where creativity becomes flavour and simplicity reveals depth.

Our Ciders
Ironwood ciders are shaped through a disciplined, technical approach to fermentation — defined by precision and an uncompromising standard of cleanliness. Fermentation is conducted under carefully controlled conditions to preserve purity and composure, establishing a neutral foundation free from distraction.
All of our apples are grown and pressed in Ontario by family-operated farms. For our modern ciders, we use a blend of McIntosh, Gala, Red Delicious, Empire, Ida Red, and Ambrosia — chosen for their consistency, gentle acidity, and smooth fermentation behaviour.
For our traditional ciders, we source classic cider varieties such as Dabinett, Bramley, and Kingston Black, selected for their tannin structure and depth. All fruit is hand-picked and sorted to ensure clean juice and reliable fermentation.
We ferment swiftly at a controlled 18 °C using selected wine yeast strains chosen for their ability to produce a composed, rounded base without aggressive acidity.
Our modern program is calibrated around a restrained malic profile, allowing brighter citric expressions — lime, lemon, yuzu, orange — to emerge with clarity and precision.
Blending is executed through structured bench trials, adjusting acidity, texture, and residual balance incrementally until the intended profile is achieved with exactness and restraint.
Yes. In addition to our modern line, we produce small-batch artisan ciders that are 100 % wild-fermented and bottle-conditioned. Some undergo natural malolactic fermentation to soften acidity and develop texture, while others remain bright and linear. These are built around heritage apple varieties and reflect the unique characteristics of each harvest.
Modern Collection: 3–5 °C — colder service heightens tension, sharpens acidity, and keeps the profile linear and precise.
Artisan Collection: 8–10 °C — slightly warmer temperatures reveal texture, phenolic nuance, and layered aromatics.
Wine Collection: 10–12 °C — allowing structure, fruit depth, and balance to unfold fully for maximum enjoyment.
Ironwood takes a technical approach to cider. Every variable — fruit selection, yeast, temperature, acidity — is chosen with purpose. We design our base for the flavour we want to achieve, then build precision around it. Each cider reflects the essence of its ingredients and the discipline behind its process.
