ABOUT IRONWOOD

Founded in 2013 in Niagara-on-the-Lake, Ironwood is a contemporary cidermaker rooted in community, craftsmanship, and design. What began as a small orchard project has evolved into an artisan house — a space where minimal aesthetics meet expressive flavour. Every pour reflects our pursuit of clarity and originality in modern cider.

Each season tells its own story — new fruit, new blends, new ideas — all guided by a balance between nature and design. From wild fermentations to modern expressions, our work captures fleeting moments and turns them into something enduring. Ironwood lives in the space between art and agriculture, where creativity becomes flavour and simplicity reveals depth.

Our Ciders

Ironwood ciders are made with precision. We ferment cold and controlled at 18 °C to produce a clean, neutral base with no off-flavours or harsh tannin. This approach allows full control over acidity, structure, and balance. Each cider is built for clarity and designed to deliver the exact flavour profile we intend.

All of our apples are grown and pressed in Ontario by family-operated farms. For our modern ciders, we use a blend of McIntosh, Gala, Red Delicious, Empire, Ida Red, and Ambrosia — chosen for their consistency, gentle acidity, and smooth fermentation behaviour.

For our traditional ciders, we source classic cider varieties such as Dabinett, Bramley, and Kingston Black, selected for their tannin structure and depth. All fruit is hand-picked and sorted to ensure clean juice and reliable fermentation.

We ferment fast and cold — around 18 °C — using neutral wine yeast strains that build a clean, round base without excessive acidity. Our modern program focuses on maintaining a low-malic profile, which allows citric-driven flavours like lime, lemon, yuzu, and orange to express naturally and cleanly. Blending is done through structured bench trials, fine-tuning acidity, mouthfeel, and residual balance until the target profile is achieved.

Yes. In addition to our modern line, we produce small-batch artisan ciders that are 100 % wild-fermented and bottle-conditioned. Some undergo natural malolactic fermentation to soften acidity and develop texture, while others remain bright and linear. These are built around heritage apple varieties and reflect the unique characteristics of each harvest.

Serve chilled — ideally between 6–8 °C. This range preserves balance, enhances structure, and maintains the intended expression of fruit and acidity.

Ironwood takes a technical approach to cider. Every variable — fruit selection, yeast, temperature, acidity — is chosen with purpose. We design our base for the flavour we want to achieve, then build precision around it. Each cider reflects the essence of its ingredients and the discipline behind its process.
